Marina Marchese is a beekeeper and honey sommelier. She is the founder of the American Honey Tasting Society and is a frequent speaker and author on the topic of honey tasting and pairing. In this podcast, Marina joins Jeff and Kim to introduce the topic of honey tasting and that it is more than smearing honey on toast or dumping it into one's tea. Marina relates to tasting honey as a total sensory experience and one that must be learned and developed. Marina discusses how to discern the unique flavors and attributes of different honey varietals and pairing them with cheeses and other foods.
Marina's ground breaking studies and experiences has lead to the book she co-authored with Kim, The Honey Connoisseur, speaking engagements and guest lecturer appearances.

Carla Marina Marchese is the founder of the The American Honey Tasting Society and an instructor for the Italian National Register of Experts in the Sensory Analysis of Honey, where she received her formal training as a honey sensory expert.
Marina 's 4th book The World Atlas of Honey, fully illustrated global survey of honey and its botanical sources. Includes history, culture, medicine and an essential tasting guide.
Her previous books are Honeybee Lessons from an Accidental beekeeper, The Honey Connoisseur and Honey for Dummies.
In 2024, she was recognized with a WISE WOMAN award for her contributions to the Italian American community by The National Organization of Italian American Women. She is the founder of the brand Red Bee Honey.
